Vegan Chilli

This Vegan Chilli is great for everyone, not just for vegans!
Ingredients
2 tbsp olive oil
1 onion, chopped
3 cloves garlic, chopped
1 green pepper, chopped
1 red pepper, chopped
4oz green lentils
½ tsp chilli powder (more to taste!)
1 tsp cumin
1 bay leaf
pinch cayenne pepper
1 tin tomatoes
¾ pint vegetable stock
1 tin kidney beans, drained
1 tin mixed beans
Method
Heat the oil, add the onion, garlic and peppers. Add the lentils and spices, the tomatoes and the stock. Simmer for 50 minutes. Add the kidney beans and mixed beans. Remove the bay leaf.
That's it! Easy!

Roast Salmon & Asparagus with Lemon Oil
Set a rack in the center of the oven and heat the oven to 450°F. Finely grate the zest from the lemon, preferably with a rasp-style grater. In a small bowl, combine the zest with 2 Tbs. of the oil. Cut the lemon in half and set aside.

Peppered Red Fish, Roast Lemon and Buttered Spinach
Dry roast the peppercorns until they start to smoke then remove from the heat and allow to cool. Season the fish and fry skin side down for two minutes or until crisp, add slices of lemon, turn and keep both warm.

Seafarers Tagliatelle
Method:Put the tagliatelle in a bowl, cover with boiling water and leave to stand for five minutes.
Sauce (to be made in a pan):
Add cream, asparagus, tomatoes, parmesan, pesto, salt, pepper and basil leaves and cook for 4-5 mins. Add sliced haddock to sauce and cook for 2- 4 mins. Finally, add tagliatelle or fresh pasta of your choice and serve. Read more
